Double Dipped Recipe for Yellow Perch

Prep Time: 10 minutes
Cook Time: till golden brown
Ingredients: Ritz crackers, salt , pepper, and some onion powder. Egg and butter.
Directions: Pulverize the Ritz crackers. Salt, pepper and onion powder to taste to the cracker crumbs. beat an egg in a small shallow bowl. Take perch fillet (skin off) and drag it through the egg so both sides are moisten. Then put the fillet in the Ritz cracker mix so both sides are nice and crumbed. Then egg it again and crumb it again. Put fillet on a plate while you melt a generous amount of butter in a frying pan. Important!!! don't burn the butter. Medium or less heat on the pan is all you'll need. When butter is melted, you can start frying you fillet. Turn the fillet when the first side is golden brown and repeat on the second side. Then feast
Other Notes: This recipe works well with catfish too.
